Craig, thanks for posting both of these, I will admit the cookies sound a lot easier to make than the cheesecake! Can you explain how to put the pie pan into a hot water bath?
Holy crap that is a complicated cheesecake recipe–it must be good, otherwise you wouldn’t go to all that trouble!
And the cookie one looks delish, I like mine sans nuts, like J’Neil. Thanks for posting these!!

First, I bake it in a round cake pan, not a pie pan; the cake pan has straight, higher sides so it’s easier to put into a hot water bath. I have an electric kettle that I boil water in, so I boil water then pour it into a large roasting pan (I use the same one that I fix turkey in for Thanksgiving) in the oven, maybe an inch worth. Then I gently put the “cheesecake in a cake pan” in the roasting pan, and add more boiling water until it’s at a level about half way up the cake pan.

I’ve not thought the cheesecake was that difficult, but it does take a lot of time and temperature management of the oven, molding of the crust, separation of the eggs, preparation of the pan, use of a hot water bath and the electric kettle, the appropriate amount of cooling time, sort of a tricky process of getting it out of the pan, and lots of cleaning of a very thin knife to cut it….ok I take that back, it is pretty complicated….

You know, I don’t always go the complicated route, sometimes I opt for easy and simple. When it comes to easy and simple cheesecake type things, I really like one that I got from Paula Dean some time ago: “Cherry Cream Cheese Pie.” I’ve posted that recipe above as well.

I’ve posted a couple more recipes above: Indoor S’Mores and Sloppy Joes. I’ve posted them because some folks at Meadow Lake last week said they were interested in them.
Just to get a little ahead of the curve: Yes, I know the Indoor S’Mores is on just about every box of Golden Graham cereal out there. However, I’ve been making them for awhile, I really enjoy them, and several folks were pretty excited about them last week. My take is to add a lot more marshmallows in the final phase so I end up with melted marshmallows throughout.
The Sloppy Joes recipe is the one I’ve been using for years. It’s very simple, very basic and consequently allows for lots of creativity if you like that sort of thing. My personal version is usually pretty generous with the mustard. You could add just about anything to it if you’d like, I’ve been known to add pepperoni.
I have been known to enjoy said sloppy joes.
OK, Robert, I’ve put up a low carb recipe on the recipe page. It’s actually for a chocolate torte, which is pretty close to a brownie type thing (kind of too rich for me); the girls seem to like it when they’re doing the diet thing. I like it if I put enough raspberries and whipped cream with it.

Just posted a recipe for fresh fruit pastries I got from a package of kiwis. I didn’t make them exactly as the recipe suggests, but it should give you the basic “idea” of them….
